Additionally, there are everyday wines and small bath local varieties like the Capannelle Toscano Chardonnay. The highlight of InCantinetta, however, is our comprehensive wine tasting session, available exclusively upon request. Guests are taken on a comprehensive journey through the Tuscan wine region led by a professional sommelier who explains the origin of the wines, their tastes and how to taste them. Wines are expertly paired with delicious appetizers for an unforgettable and indigenous experience. Restaurant Incanto, Overlooking the Ponte Vecchio, Belvedere and Chiesa del Cestello, the terrace at Restaurant InCanto is undeniably one-of-a-kind. The rushing water of the ARno provides the perfect soundtrack for a relaxing, palate-pleasing meal. Inside, the striking dining room is the design of a notable architect. This regal room, where glinting crystal chandeliers highlight high ceilings and authentic moldings and sconces decorate the walls, symbolizes both the worldly and contemporary sides of the Grand Hotel. The clean lines of the supple brown leather chairs harmoniously detail the restaurant's modern intonation, also seen in the classic-with-a- twist Italian offerings. The open kitchen offers diners a glimpse of Tuscan born, internationally trained Chef as he flawlessly fuses contemporary European cuisine. An innovator who has been the hotel's Executive Chef since 1997, the Chef combines traditional Italian techniques with contemporary cooking methods. The results are new and surprising dishes. Two especially celebrated creations are his beef carpaccio marinated in Tuscan herbs served with Parmesan cheese, vinegar jellies and rucola mousse and his Pesto gratinated fillet of beef with onions and peppers in Montalcino red wine sauce.
