The Balmoral Bar, The focus of the bar menu is on the classics, with a twist - cocktails shaken and stirred to perfection, luxury and vintage champagnes and malt whiskies exclusive to The Balmoral. The menu will also feature a collection of innovative "signature" cocktails which will change regularly, using fresh and seasonal ingredients such as the Citrus Cosmopolitan with Blueberry Juice and the Apple and Pear Mojito. The Balmoral seats 70 and is open for hotel guests and non-residents. To book a table call ahead.

The Bollinger Bar, The Bollinger Bar at the Palm Court--Scotland's only Bollinger Bar - is the ultimate Champagne Bar and a hot-spot for guests and Edinburgh locals alike. The Bollinger Bar is known for offering guests a sample of the finer things in life, from an extensive range of single malt whiskies and vintage champagne to innovative cocktails, including a range of non-alcoholic cocktails. Hadrian's(*), Hadrian's is the Balmoral's chic and stylish brasserie, which serves delicious cuisine in an informal ambience. The chef has created a cosmopolitan menu offering a mix of Scottish dishes and innovative European cuisine. Its stylish interior has a distinct 1930's Art Deco influence, with walnut floors and a palette of lime plush splash of African violet. The combination of colors was inspired by the natural landscapes of Edinburgh, taking the Salsbury Crags, sea and sky as influences.
