Cullen's At The Cottage, A short stroll across the River Cong, Cullen's at the Cottage, named after the late Peter Cullen, our Maitre D' of the Castle Restaurant for over twenty five years. It is the final piece of the jigsaw as regards the Ashford dining experience, offering a bistro-style menu with a relaxed atmosphere. The substantial menu will offer something for every whim. Choose a lobster from the tank or enjoy a light salad. Cullen's allows you an informal option outside the castle, whilst still on the Ashford Estate.

The Connaught Room, This is the most beautiful and intimate room in the castle, showcasing the very best in Irish produce. Enjoy spectacular views of Lough Corrib and marvel at the delicate wood carvings and spectacular hand-carved Inglenook fireplace. Executive Chef Matz has created a tasting menu that is based on the fresh- est local produce and also an la carte menu. The tasting menu is available as a five- or seven-course menu and is changed regularly according to season and availability. Robert Bowe our award-winning Sommelier will accompany each tasting menu with a wine suggestion offering a different glass of wine for each course. Reservation in advance is recommended. Open Thursday to Sunday, mid-May to September.

The Drawing Room, Serving lunch, afternoon tea and for a more casual evening dinner option, the Drawing Room is the perfect place to relax without formality. The all-day menu is served from 11am to 11pm. Afternoon Tea is served between 3pm and 5pm daily. You may choose from a selection of sandwiches, salads made from the finest of local produce, hearty soups or something more substantial. The Irish stew is a real favourite, made with lean lamb and local vegetables served in a wonderful flavoursome broth.

The George V, The George V Room was so-named following the visit of the Prince of Wales, who sub- sequently became George V of England. It offers breakfast and a table d'hte dinner menu, and is Ashford's main dining room. Here, guests can luxuriate amid the pristine period decor and choose from a world-class menu of modern Irish and international cuisine. The discreet service and luxurious furnishings of the George V Room offer a perfect setting in which to enjoy the traditional art of elegant dining. Dress Code: Gentlemen are requested to wear Jacket & Tie.
